Six-time Chelsea Flower Show gold medalist Bunny Guinness helped Caryn Hibbert to create a series of classic country house gardens that frame the barns, houses & cottages, each with a unique personality. There are delightful arbours and seats in quieter places in which to relax and linger, but also working gardens and orchards that supply flowers for the houses, food for the kitchen, & herbs for the spa.
The farm stretches across 150-acres, and here, wild spaces and a productive kitchen garden flourish. Situated on the edge of the water meadows, Thyme’s carefully managed kitchen gardens ensure abundance from the land while protecting and maintaining the fertile alluvial soil. The garden is productive all year round and features a newly planted herb garden, cutting gardens - and poly-tunnels to extend the seasons. Thyme grows a large variety of flavoursome and unusual varieties to supply the restaurants, cookery school and spa.
Thyme is a restored historic Cotswold manor and farm. It is a family story where a passion for the land, food and entertaining, merges with a love of local heritage, beauty and conservation.
It took time to make Thyme. Working with the historic buildings and the farm that surrounds them, this a thoughtful place with love and attention lavished on every detail. Thyme is created to evoke a real connection to the land, the seasons and to nature, and we invite you to rest, relax and enjoy this English country idyll that this family call home.
All bedrooms, small, medium and large are individually decorated, with colours inspired by their botanical names and graced with carefully sourced antique pieces, no two rooms are the same. All have beautifully comfortable mattresses and linens and have views of the gardens, some through small, some with larger windows and some look over to the farm too.
